The food & beverage industry traditionally relies on concentration processes i.e. to prepare products for shipment or storage or to conveniently use them as an ingredient for the manufacturing of another product.

Conventional concentration technologies include in particular evaporation or Reverse Osmosis (RO) membranes. Evaporation involves high temperatures, while RO is based on the application of substantial pressure. Either has a strong impact on the concentrate; i.e., there can be substantial changes to the taste profile of the concentrate, nutrients as well as its bioactivity. Both require a tremendous input of energy.
